Oil colour: intense golden yellow colour with green hue
Classification: medium fruity
Oil aroma: rich in fruity notes of green tomatoes, banana, white apple with a top fragrance of officinalis herbs with distinct traces of parsley and basil.
Oil taste: tones of lettuce and celery and a nutty aftertaste that lingers on the palate.
Olive variety processed: Peranzana
Olives' harvesting period: from 20th October to 15th December
Ripening process: usually medium to fast
Picking method: mechanical and manual on centuries-old olive trees
Pressing method: continuous cycle with Alfa Laval plant
Extraction temperature: cold extraction (< 26°C)
Control system: conforms to HACCP, the internationally recognised system of food safety management
